Right click the bar at the bottom, in a blank space, and click properties. From there look through the tabs until you find the right option bar. Im on Vista so it may be different although mine is under "Notification area", then "System icons" box, with the option "Volume", if you are on vista :)
Alternatively you can access the controls from Start > Control Panel > Sound |

Hmm had a look around can't see any extra options. Have you tried a simple reboot since? Are you sure you can't remember what you did? This is a really weird issue

open it from your control panel and it should reappear in your taskbar

Go to control panel then (when set to classic view) go to sound and audio devices and there should be an option to put an icon in the task bar.
